Waffles Recipe With Beet Coconut Whipped Cream


    What You’ll Need For The Waffles:

    • 2 cups spelt flour
    • 3 tbsp Cashew Milk Powder
    • 2 tsp. baking powder
    • 1 tsp. cinnamon
    • Pinch of sea salt
    • 2 cups water
    • 1/3 cup avocado oil
    • 2 eggs
    • 1 tsp. vanilla
    • 1-2 tbsp. maple syrup (optional as I always sweeten the waffles after they are baked.)

    What You’ll Need For The Whipped Cream:

    • 1 can coconut milk (400ml) refrigerated overnight
    • 1 tbsp Beet Latte Powder
    • Icing sugar (amount depends on desired sweetness)

              Dairy Free - Refined Sugar Free

              • Prep Time: 5 minutes
              • Chill Time: 1 hour

                Preparation:

                1. Mix all of the dry ingredients for the waffles together. Add in the liquid ingredients and stir until just combined. Bake using a waffle maker.⠀⠀⠀⠀⠀
                2. For the beet whipped cream, Separate the thickened coconut cream from the water and put the thickened part into a mixing bowl. Add the Beet Latte Powder and icing sugar. Using a mixer, beat for 30 seconds-1 minute, until smooth. Adjust sweetness if needed. Top waffles with whipped cream, fresh berries and maple syrup!
